These unroasted green coffee beans are decaffeinated using the 100% chemical-free Mountain Water Process in Veracruz, Mexico. Pure spring water from Pico de Orizaba—Mexico’s tallest mountain—is used to gently remove caffeine while preserving the bean’s natural complexity and sweetness.

  • Recommended Roast Level: Medium-Dark

  • Flavor Notes: Caramelized sweetness, a hint of citrus brightness, and a smooth, well-rounded finish

  • Process: Mountain Water (non-chemical) decaffeination

Expect a balanced cup with medium body, low acidity, and depth that shines in filter methods, French press, or espresso—once roasted.

  • Decaffeination Method: Mountain Water Process

    The Mountain Water Process is a chemical-free decaffeination method carried out in Veracruz, Mexico—also known as the Mexican Water Process. It uses pure spring water from Pico de Orizaba, Mexico’s highest mountain, to gently remove caffeine while preserving the coffee’s natural flavor.

    Here's how it works:

    • Extraction: Green coffee beans are immersed in mountain water, which extracts the caffeine along with soluble flavor compounds.

    • Filtration: The caffeine is then separated from the water via a specialized carbon filtration system, leaving behind the original flavor elements.

    • Reabsorption: The flavor-rich, caffeine-free water is reintroduced to the beans, allowing them to reabsorb their natural characteristics—minus the caffeine.

    This gentle, non-chemical process results in green coffee beans that are 99.9% caffeine-free, with their original taste profile largely intact. Once decaffeinated, the beans are dried to the ideal moisture level before export.
